Earl’s Thai Chicken Salad remade!

My favorite thing to order at Earl’s restaurant back in the day was this salad. I was so very sad when they took it off their menu. I played and played with similar ingredients until Yay I got it! This isn’t only delicious, but healthy and light too!

serves 4

DRESSING

1/4 cup ketjap manis (Indonesian soya sweet sauce)

2T sambal oelek (spicy garlic chili sauce) or to taste

2 cloves garlic

1/4 tsp sesame oil

juice of one lime

SALAD

1/2 lb Thin oriental steamed noodles (the kind you find in the produce department) cooked and cooled)
2 Skinless chicken breasts (marinated in 1/2 cup of the dressing)
1 Large head Romaine lettuce, washed and chopped
1/4 cup Fresh mint, chopped
1/4 cup fresh cilantro, chopped
1/2 cup Diced red onion
1/2 cup Unsalted roasted peanuts

To prepare:

Pan fry or BBQ the chicken strips and set aside.

To assemble:

Place noodles at the bottom of a deep bowl
Place romaine lettuce
Add chopped mint and cilantro, red onion place chicken on top and sprinkle with peanuts
Drizzle with dressing and serve!

Perfect for a light spring or summer meal!image
